About

Literature student Esben Piper co-founded the roastery in Aarhus in 2012 after a transformative encounter with Guji coffee from Sidamo. Head roaster Mikkel Selmer won both the Danish Brewers Cup and AeroPress Championship in 2014. Their Cerro Azul Geisha from La Esperanza, Colombia went on to win competitions for baristas in Austria and Australia.

The 'One Roast' philosophy applies a single profile per bean, prioritising brightness and transparency. Visits to Yirgacheffe and Sidamo in Ethiopia and the New Ngariama Farmer's Cooperative Society in Kenya shape the sourcing. Highly commended as Europe's best independent coffee shop at the 2023 European Coffee Awards.

Roasting

Copenhagen roastery at Århusgade 118X in Nordhavn, with a second facility in Bushwick, Brooklyn. 'One Roast' technique applies a single profile per bean suitable for all brewing styles. Emphasis on brightness and transparency to reveal terroir and processing methods.
