Her son handles most brewing while Pa Pim works the ROK manual espresso makers, rotating unpredictably between locations.
Thai beans span Doi Saket, Doi Sam Muen, Mae Jun Tai, and Pangkhon from Chiang Mai and Chiang Rai. Imports reach from Panama Gesha Ninety Plus and Yemen Mokha Mattari to Honduras whisky barrel-aged and Kenya Kirinyaga Gesha. Six house blends include Hidden Whisky pairing Chiang Mai Mae Tang with Honduras Finca Moka, and Eclipse Melon adding Colombian melon barrel-aged.
