Pornprasit 'Sith' Phaisalsinsakul represented Thailand at the World Coffee Roasting Championship in both 2017 and 2019. A Q-grader, he roasts on Giesen W1A and W6 machines, selecting beans with cupping scores above 80. His family has made buns and dumplings at Tai Pae since 1932, and handmade salapao in five traditional fillings join pork and shrimp dumplings alongside the coffee.
